I am not sure what you are trying to do. I am not sure whether you can share Outlook unless you have an Exchange Server. With that you can set up sharing and even share an Address Book which can be updated by 2 people. In all my years of working with it, no one has asked me set it up this way where two pople can enter data at the same time. I have set up systems where two people can access the same address book or receive each others' emails when one is on vacation.
The only other way (it may work) is by setting up sharing of the Outlook folder that resides in the host computer. On the other computer you want to point Outlook to use the data (.pst) file on the Host computer. You can do that by opening Outlook and going to Options under the Tools tab. Click on Mail Setup tab and Data Files. You can add a path to the shared folder.
Other than that, try researching Microsoft Knowledgebase on their web site. They may have a way to do it. :)

This feature is acually built into Windows XP. The program is called netmeeting. It is a bit hidden, so that's why you probably never knew it was there. Go to the provided link for instructions on setting it up and using it. It does everything you asked for, plus a lot more.
